Mise en Place Kitchen

You've been prompting wrong. Not slightly wrong. Fundamentally, architecturally, embarrassingly wrong.

I know because I was too.

I spent three months building an automated AI prompt store. Thousands of prompts. Tested against real customers. Real money on the line. And the single biggest lesson had nothing to do with AI, nothing to do with language models, nothing to do with "prompt engineering."

It came from a French kitchen technique invented in 1890.


The Lie You've Been Told

Every "prompt engineering" guide on the internet tells you the same thing. Be specific. Give context. Use examples. Iterate.

Fine. Correct, even.

Also completely useless.

That advice is like telling someone who can't cook: "use fresh ingredients and season well." Technically true. Practically worthless. Because the problem was never the ingredients or the seasoning. The problem happens before any of that.

Here's what I mean.

Go open ChatGPT right now. Type a prompt. Watch yourself do it.

You're thinking and typing at the same time.

You're formulating the request AS you write it. Grabbing for context mid-sentence. Remembering details you forgot. Adding constraints as afterthoughts. Restructuring the ask halfway through.

You're cooking and prepping simultaneously.

And that — not your word choice, not your model selection, not your temperature setting — is why your outputs are mediocre.


What a French Chef Sees That You Don't

In 1890, Auguste Escoffier formalized something that already existed in professional kitchens: mise en place. French for "putting in place."

The principle is brutal in its simplicity:

Everything gets prepped, measured, cut, arranged, and positioned BEFORE the flame goes on.

Not most things. Everything. Every sauce component pre-measured. Every garnish pre-cut. Every tool in its exact position. The cutting board clean. The station organized. The mind clear.

Then — and only then — does cooking begin.

Professional kitchens don't do this because they're obsessive. They do it because fire doesn't wait. Once the sauté pan is hot, you have seconds. Reaching for an ingredient you forgot to prep means a burned pan, a ruined dish, a backed-up ticket line.

The amateur home cook? They dice an onion while the oil smokes. They hunt for cumin while the garlic burns. They realize halfway through they're out of cream.

Same ingredients. Same recipe. Completely different results.

Now look at your prompts again.


The Prompt Mise en Place

Here's what changes when you stop typing prompts and start prepping them.

Before you write a single word to the AI, you answer these questions. On paper. In a notes app. Somewhere that isn't the chat window.

Station 1: The Outcome (What's the dish?)

Not "what do I want the AI to do." That's too vague. A chef doesn't say "make something good."

Instead:

  • What EXACTLY does the finished output look like?
  • How long is it?
  • What format is it in?
  • Who reads/uses it?
  • What does the reader DO after consuming it?

A prompt without a precise outcome definition is a recipe without a dish name. You'll get food. It might even be edible. But it won't be what you needed.

Station 2: The Ingredients (What goes in?)

What raw material does the AI need?

  • Background context it can't know
  • Specific data, names, numbers
  • Examples of good output (the reference dish)
  • Examples of BAD output (what to avoid)
  • Constraints that aren't obvious

Most people dump this into the prompt as they remember it. Mid-sentence. Out of order. Contradicting something they said two paragraphs earlier.

Prep it separately. Organize it. Then transfer it in.

Station 3: The Role (Who's cooking?)

"You are a helpful assistant" is the equivalent of hiring a line cook and not telling them what station they're on.

The role isn't flavor text. It's a cognitive frame that determines how the model processes everything else.

"You are a senior copywriter at a direct-response agency with 20 years of experience selling digital products" produces fundamentally different output than "You are a helpful writing assistant."

Same prompt body. Different role. Different dish entirely.

Station 4: The Sequence (What order?)

This is where most people completely fall apart.

Complex prompts have a natural order. But because people compose them in real-time, the order is whatever they thought of first. Which means:

  • Constraints appear after the request (the AI already planned without them)
  • Context appears at the end (the AI read everything before understanding why)
  • The most important instruction gets buried in paragraph three

Professional prompt mise en place arranges the components in the order the AI needs to process them:

  1. Role (who am I?)
  2. Context (what do I know?)
  3. Task (what am I doing?)
  4. Constraints (what are the boundaries?)
  5. Output format (what shape is the result?)
  6. Quality markers (what does good look like?)

The 30-Second Test

Here's how to know if you're doing mise en place or just winging it.

Time yourself. From the moment you decide you need AI help to the moment you hit send.

Under 30 seconds? You didn't prep. You're the home cook with the smoking oil and the missing cumin. Your output will reflect that.

2-5 minutes? You're thinking. You're organizing. You might be doing mise en place intuitively.

5+ minutes before your FIRST prompt in a new task? You're prepping. You'll get first-attempt output that most people can't achieve in ten iterations.

The math is counterintuitive. 5 minutes of prep + 1 prompt beats 30 seconds of typing + 12 re-prompts. Every single time.

I didn't believe this until I tracked it across 400 prompts. The data was embarrassing. My "quick" prompts averaged 4.2 iterations to reach acceptable output. My prepped prompts averaged 1.3.

Total time? The prepped prompts were 40% faster.


Why This Actually Matters (Beyond Your Chat Window)

Here's the thing about mise en place that nobody in the "prompt engineering" space talks about.

Escoffier didn't invent mise en place to make individual dishes better. He invented it to create a system that produces consistent excellence at scale.

Before mise en place, restaurant quality was unpredictable. Dependent on the mood, memory, and attention of individual cooks. One night your steak was perfect. Next night, same cook, same recipe — garbage.

Mise en place removed the variability. Not by making cooks better. By making the system reliable regardless of the cook's state.

This is exactly what's happening with AI prompts at a larger scale.

Companies that treat prompting as an ad-hoc skill — "some people are just good at it" — get wildly inconsistent AI output. The same team, same model, same use case, different Tuesday, different results.

Companies that build prompt mise en place — structured templates, pre-organized context libraries, standardized role definitions, sequenced components — get consistent output. From anyone. On any day.

The prompt pack isn't just a convenience. It's mise en place in a box.

Someone already did the prep. Already organized the stations. Already sequenced the components. Already tested the output 50 times.

You just add your specific ingredients and cook.


The Uncomfortable Part

I need to tell you something that the "everyone can be a prompt engineer" crowd won't.

Most people will never do mise en place.

Not because it's hard. Because it's boring. Because the dopamine hit of typing a prompt and getting an instant response is addictive. Prepping feels like wasted time. Even after you've seen the data. Even after you KNOW it's faster.

This is also true in kitchens. Home cooks know about mise en place. Most don't do it. Professional cooks do it because the consequences of not doing it are immediate and visible — burned food, angry customers, lost money.

The consequences of bad prompts are softer. Mediocre output. More iterations. Vague dissatisfaction. "AI isn't that good yet."

It is that good. Your mise en place isn't.


What to Do Next

Three options, in ascending order of commitment:

Option 1: The 5-Minute Rule. Before every non-trivial prompt, spend 5 minutes with a blank document. Answer the four stations. Then — and only then — compose the prompt. Do this for two weeks. Track your iteration counts. You'll convince yourself.

Option 2: Build Your Station Kit. Create a personal template with the 4 stations. Save it somewhere accessible. Every time you prompt, pull up the template first. Customize for each use case. Over time, you'll build a library of prepped stations for recurring tasks.

Option 3: Use Someone Else's Mise en Place. This is what professional prompt packs are. Someone spent dozens of hours prepping each prompt. Testing it. Sequencing the components. Defining the roles. Organizing the context requirements. You plug in your specifics and get first-attempt excellence.

There's no wrong answer. There's only doing mise en place or not.
